Raw Vegan Tacos
Made with living foods, sunflower seeds, these raw vegan tacos are both very delicious and highly nutritious!
Along with protein based dips dairy-free nacho cheese they're the ultimate healthy Taco weekend meal!
Serves 8
Ingredients
Taco Filling this is the meat
- 1 cup raw sunflower seeds, (or walnuts) soaked in water for 2 hours, rinsed and drained
- ¼ cup sundried tomatoes, soaked in water for 2 hours, rinsed and drained
- 1 teaspoon apple cider vinegar
- 1 teaspoon tamari
- ½ teaspoon chili powder
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon paprika
HUMMUS
- 1 can washed, strained chick peas
- 1/2 lime juice
- 3 Tbspn tahini
- 1 Tbspn olive oil
- ½ teaspoon pink salt
- 1 clove garlic, minced
- Chopped cilantro, optional
Blend all ingredients, set aside in a small bowl
Cashew Sauce
- 1 ½ cups raw cashews, soaked in water for 2 hours, rinsed and drained
- ½ cup water (add more if needed)
- 1 ½ tablespoons lemon juice
- 1 Tbspn Apple cider
- 1/2 lemon juice
- 1 teaspoon pink salt
Blend all ingredients, set aside in a small bowl
TOMATO SAUCE
- 1 large ripe tomato
- 1 date
- Pinch chilli or paprika
- 1 tspn olive oil
- Pink salt
Blend all ingredients, set aside in a small bowl.
Fresh vegetables
1 cup Tomato diced
1/2 cup Spanish onion, diced
1 red capsicum, finely chopped
Tacos
- 8– 10 romaine lettuce leaves
Instructions
- Pulse all of the taco meat ingredients together in a food processor until the sunflower seeds are ground and the sundried tomatoes are chopped. Stop machine to scrape down the sides as needed. This could take several minutes. Set aside until ready to use.
- To make the sauces hummus, tomato sauce and cheese ,blend ingredients to a smooth texture. Set aside in separate Bowls.
- Adjust the spices and salt to taste. Set aside until ready to use.
- Use a vitamix, food processor or high-powered
- To make the nacho cheese sauce, take half of the cashew sauce and blend in the cheese sauce ingredients, using a food processor or high-powered blender. You can mix by hand of a chunkier sauce
- To assemble the tacos, place the sunflower seed meat into a lettuce leaf. Full with raw vegetables and top with sauces. , and then drizzle with nacho cheese sauce and other rest herbs like basil or coriander. Enjoy
