Sharing my new recipes and way of life gives me great satisfaction and keeps me stimulated, in fact I get excited about healthy food, I go crazy and have so much fun creating and sharing. 

I was priveldged enough to meet Chicco in Bali and work with his head chef of the most serene beautiful 'Day Spa' Resort I have experienced.

Why Raw Food?


Live plant based foods provide the body with life force, energy. Uncooked food is kept in its highest potential of providing the body with  maximum  nutrients, mineral and vitamins. They include plant based foods such as fruits, vegetables, grains, nuts, seeds,seaweed and juices. Raw Vegan master class recipe 1



 Zucchini Alfredo




2 Zucchini Sliced finely or grated with a zucchini peeler
6 cherry tomato, sliced
1/4 cup sun dried tomato
1/2 cup black olives
2 leaves of basil chopped finely
2 Shallots chopped finely
1/4 cup Olive oil
Cracked Pepper to taste

Method

Cut zucchini long ways in half and slice with a zucchini slicer to make long strips of spaghetti, place in a large bowl.
Add cherry tomato, sliced olives, shallots.


Add cashew nut cream (SEE BELOW) to the bowl of salad and mix ingredients through  with your hands well. 
Serve on plate and garnish with basil. Sprinkle macadamia on top.(SEE BELOW)




Cashew  Cream

1 cup raw cashew nuts, soaked 1-2 hrs 
1 lemon, freshly squeezed 
1/2 soy milk
pinch of salt

Method

Blends al ingredients in a processor well until smooth and creamy.


Macadamia Topping

Process 1/2 cup of macadamia,
1-tablespoon soy milk 
pinch of salt.

Option drizzle with 100% Olive oil and cracked pepper to taste.

Align your path...




“When you feel like you are not getting anywhere, through hard work, I like to look at a stone cutter… hammering away at his rock, maybe a hundred times with out a crack, yet the hundred and first hit, it will crack in two, and I know it was not the last hit that did it but all the hard work that had gone before.”

I am grateful to have a signed contract for  my second book, and  have this opportunity to write my very first cook book... Although I have had to redo recipes and write and rewrite, I know I will nail it right eventually. My intention today is persistence… many give up when they don’t realize their full potential and success is just around the corner.
 Keep on going, when your body is tired and you see no gain and all you want to do is sigh, you must pick yourself up with a mood booster and keep on going down your track. Make it bright, happy, joyful on your way and your GOD,  divine energy, angle  or guides will keep you safe, secure and lead you to love, success, peace  and abundance. Believe in your dreams and don’t let anyone else distract you away from what it is YOU want to do in your precious life.
A mood booster, is to change your state... if you are down, or in a low negative mindset, it is vital to change your state to happiness, love , joy,  and gratitude before you can start receiving all it is you desire.

Macaroni chia cheese


Macaroni cheese was often a popular weekend dish for me as a child  living in New Zealand, I remember it for the cheesy and savoury taste. I loved cheese as a child. In those days we were programmed that 'Cheese' and 'Cows Milk' is the only way to get the best  calcium intake.

These days living the lifestyle I lead and learning  the rewarding benefits  about raw food I can only look back and see how the amounts of pasta and dairy didn’t serve.  As a child I do remember getting sick often, and I do remember that feeling of heaviness after eating a  dairy cheesy milky dish.

Recommendation for adults is 100mg of calcium per day. One cup of milk has 296mg, but there are plenty of reasons you might not want to drink cows milk from personal to medical reasons.

10 Foods high in calcium that don't come from a cow.

Chia Seeds 820mg/100g -  1 Tablespoon = 123 mg 


Seasame 1/4 cup 351 mg calcium

Spinach   1 cup 245 mg 

Black strap molasses 1 Tablesoon 137 mg

Broccoli 2 cups 124 mg

Brazil nuts (I use to eat these when I was breast feeding.) 12 nuts = 90 mg 

Celery -2 cups 81mg 

Almonds 23 nuts aprox - 75mg 

Flaxseed 2 Tablespoon 52 mg 

Cow's milk, 1 % 120MG/100g

My passion these days is to share with the world you can get more quality calcium intake in other foods you didn't dream of eating or mixing together and they are all wholesome, raw, and from a plant not a COW! When you think how simple that strategy is 'eating plant based foods, rather than animal' it makes sense your body is only going to turn into a powerhouse for 'Energy and Vitality' 
Nature provided and abundant supply of  live grown foods for us to enjoy and benefit the nutritional value from. Most of these super foods I use in the recipes are ancient and been around for thousands of years. 
We just didn't know about them. When you open your mind to new ways, 

 I am excited to create this dish and I know you will enjoy it as much as I did and it is raw, high in calcium and ever so satisfying. 

Macaroni Chia Cheese

Ingredients
1-cup cashew nuts presoaked 2 hrs
4 Yellow Squash
¼ cup olive oil
½ teaspoon sea salt
¼ cup of savory nutritional yeast
1-teaspoon onion flakes
1-teaspoon chillie flakes
2 Tablespoon chia seeds
2 Tablespoon freshly squeezed lemon
¼ Shallot
Pinch of turmeric
½ garlic clove
½ cup walnuts
Paprika

Method
Slice squash with zucchini peeler or slicer to create long noodles, allow to sit.
Mix 1 Tablespoon of chia seeds into remaining ingredients and process until smooth and creamy. Add to yellow squash and massage through with your hands slowly and gently, unitl mixed thoroughly mixed through.

Process walnuts and a pinch of chille flakes and sea salt. Top with walnuts as the bread crumbs.

8 Health Benefits of Zucchini





As a child I really didn't like my greens! In fact I did everything I could to avoid them and lived off yoghurt, cheese and ice cream. Any wonder looking back why I struggled frequently with colds, flues, congestion, hay fever, and often getting sick.  I wasn't aware of healthy eating and living like I know.
My sweet kind hearted Mum loved to force our  veges in to us, fresh from my Dads garden but I just hated greens! Why? Because they were over cooked, soggy and mushy. The taste of cooked soggy zucchini  and boiled cabbage just never tempted my palette.


These days...


I have discovered the freshness and great taste from raw living foods. 
I love creating recipes with zucchini especially after my recent trip to Bali where I was fortunate to learn from Master Chef 'Made Ruthna' of the amazing resort Fivelements http://www.fivelements.org/
One thing I learnt was combining  five spices rule to zucchini to create the most exquisite taste.


There are many great health benefits from eating zucchini. Not only is is low in calorie because of its high water content, there are many reason why incorporating zucchini to your nutrtion will serve your body.


This is what I discovered.


  1. 1 cup of zucchini is 36 calories, if you are into calorie counting. What excites me is it aids digestion, prevents constipation, maintains blood sugar levels, and overeating.
  2. Lowers cholesterol 
  3. Healing food and cancer prevention, because of it high dietary and fibre content, it keeps the bowl regular and healthy. The vitamin A and c, as well as folate act as a powerful antioxidant, that fight oxidative stress that can lead to all types of cancer.
  4. Prostate Health studies show the phytonutrients found in zucchini aid reducing symptoms of benign prostate hypertrophy, a condition in which the prostate glands enlarges and leads to complications with urination and sexual functions in men.
  5. Anti-inflammatory Vitamins C and A not only serve our body as powerful antioxidants, but also as effective anti-inflammatory agents. Research shows along with copper found in zucchini, these vitamins can help  prevent the development of osteoarthritis, asthma and rheumatoid arthritis.
  6. 1 cup of zucchini contains 10% of the RDA of magnesium  and folate. Minerals that have been proven to reduce the risk of heart attack and stroke. 
  7. High in Manganese a trace mineral and essential nutrient, with many health benefits such as healthy skin and proper wound healing.
Try my tasty quick and easy Zucchini Soup



  Zucchini Soup

3 Peeled Zucchini
1 freshly squeezed lemon
1/3 cup olive oil
1/4 teaspooon sea salt
1 tsp ginger
1 tsp diced onion
1 tsp agave
1 tsp cumin
1 TBSPchia seeds
1 cup water


Method
mix chia seeds in 1/2 cup of water, allow to form a gel consistency.

Blend all other ingredients  until smooth including 1/2 cup of water. Add chia seeds, blend well.
Garnish with cherry tomato. spring onion and coriander and cracked pepper to taste.

A country life...

Living in small town had many positives...

I spent my childhood living  in the picturesque small town Dundedin NZ. I lived  in a small suburb called Abbotsford  where everyone knows everyone.  I lived there until I left to begin a new life with my husband in Sydney with our first baby girl Lucia in 2003.  Like many teenagers I couldn't wait to leave  high school so I could set out on my own. I promised myself that once I had a choice I would no longer live in any place that required de-icing my windshield in the morning. So far I have made good on that promise.

However, 10 years later. I've grown to love my old hometown and the lifestyle I was fortunate to have as a child.  I love the rolling hills covered in trees, the foggy mornings, the sheep and cows  grazing in the paddocks  and  streets with names like Saddle Hill and Green Island.  I  love the  sun-light  when it would shine, in my parents  old lounge room in the late afternoon. I'm lucky to be able to go back to the house that I grew up in. I know so many people out there that can't do that. My Dad lived their as a child and still does today.

But it's true when they say that you can never truly go back home. Dunedin has changed. Not for the bad, but it has changed. It's still beautiful, and quaint.  Most of my friends are all still there but people are all busy living their own life.  When I was last home we visited our regular vacation place Alexandra. There are so many wonderful childhood memories there. I use to take my pony on holiday with me and stay with my favourite Auntie and Uncle on their farm. I drove through the quiet neighborhoods tucked in between the dry paddocks, mountain views, and now surrounded by lush winery’s,  flashbacks of the old days crept in as I came across a familiar driveway to an old friend's home. It's hard not to feel nostalgic during moments like these. Even if I would never want to do it all over again I can still miss it..... galloping the horses up and down the cherry orchards bareback,  helping to scare the birds form eating the cherries. The walks up the hill with my brother  to catch bunny rabbits and take them home to your own back yard, climbing the beautiful willow trees and  making tree huts. I can still smell the strong aroma of Thyme. I was admittedly a real Tom Girl. But there is something about nature that just naturally grounds us and helps to keep you feel earthy and connected.  You only need to stop for a moment and lye yourself down on the grass to feel this serene feeling. 
Today I live in the fast pass of 'Sydney' I wouldn't trade it for anything... however I do find myself making more of an effort as I age to surround myself with nature and live as simple as possible. Practising meditation and an attitude of gratitude for the nature and beauty that surrounds us keeps me grounded and connected everyday. Having the priviledge to walk my girls to school each day and connect with nature is the highlight of my day.



So here is a tiny glimpse into my old past.... small snapshots of my home town, the beautiful produce from Central Otago.


This is the bridge just before arriving into Alexandra, our weekend and vacation destination. My Dad use to play a game with my brother, sister and  myself , who  would see  the bridge first, every time we trabvelled... It was always a competetion and a big scream! " I see the bridge first!"

This is Saddle Hill in Dunedin... the view from my Mum's lounge window. As a child I grew to take that view for granted, but today I can appreciate it when I return home.
This is Blackhead beach, where I use to ride my pony along most days after school and days off when I should have been at school!

Truths about Success

I love studying what drives people and what those 10% of highly effective and successful people do.

Here are some Truths about Success...

  • Success means living the life you adore and love
  • Success is knowing who you are and having a trust in the divine energy, god, the universe
  • Success isn't always measured by financial gain
  • Becoming financially secure I believe is having faith in  the divine energy, God or the universe, what ever you like to call it and what you believe in, but you must believe in something. 
  • Money gives you choices, and helps you help others, but its not God, and its not going to be make you happy. You have to discover the happiness and your soul purpose to make you happy.
  • Successful people have balance in their life
  • 98% of millionaires in USA have been successfully married for over twenty years
  • Successful people know how to play as well as work hard
  • Success means to dream big, as well as act, to believe as well as PLAN!
  • You can have control of your time when you are successful
  • It is possible to be a great parent and become successful
  • If you are in a relationship with the living, appreciating nature, practising gratitude everyday, loving God, the divine and universe,  happy, compassionate and forgiving  you are already successful.

My definition of Success


What is Success? Success to me is ...
Success is not Fame, money or Power.
It is when you wake up in the morning so excited about life and what you have to do that you literally fly out the door. Its getting to work with people you LOVE!
Success is connecting with the world and making people FEEL!
It's finding a way that can bind people together.
Its falling asleep at night knowing you have done the best job you can.
Success is JOY, FREEDOM, ENERGISING, FEELING FULFILLED...
Success is LOVE.

Nicky’s Tips on Living a Raw Food Lifestyle

Raw Food is the ULITMATE nutrition plan. Why? You do not feel like you are on a diet when eating this way of life. Wildlife consume RAW food and have abundant of strength and energy and so can YOU!
  •    Enzymes in RAW food makes digestion so

much easier, so the body has more energy for
other functions like DETOXIFICATION. It is
recommended to detoxify and cleanse your
system at least 4-6 times pr year.

  •     Raw Food heals the body… research shows when

on a raw food diet, tumors have been known
to reduce in size, but when cooked food was
consumed the tumors would again begin to grow.

  •    If Raw food can heal, then it can obviously

PREVENT SERIOUS disease.

  •     We need raw oils and fats in the diet to help

produce hormones and maintain a healthy
nervous system. Eat foods abundant in
Omega 3, 6, 9.

  •     Never cook Walnuts. Cooking omega 3 foods

turns their oil into harmful trans-fatty acids. The
same applies to oily fish which contain omega 3.
Always cook fish on very low heat.
  •    Give thanks to your food and thanking our

creator for the abundance that has been
provided.
  •    Most green vegetables contain some omega 3

as do walnuts and linseeds.
  •    Learn to eat a wide variety of food, mono diets

are not healthy and over dosing in one food will
eventually cause the body to suffer to some
degree.
  •     Learn to become intuitive with what your body

needs. Listen, be calm and ask yourself what
you really feel like. Pregnant women usually
develop strong desires for certain foods and
this is because the body is intuitively providing
the body and child with nutrients it needs.
  •    Follow the seasons, this helps you have a wide

variety of nutrients throughout the year and
optimal health. It ensures we do not overdose
on one food.
  •    Traditionally cooked foods that can be RAW

eg: Beetroot, pumpkin and even sweet potatoes
can be shredded and eaten raw if mixed with a
suitable dressing such as lemon juice, vinegar,
herbs and a little olive oil.
  •    Most nuts can go rancid 4 months after shelling

unless refrigerated. The nuts found in our
supermarkets are usually rancid and not fit
for our consumption.
  •     Vegetarians and Raw Fooders who are largely

vegetarian will probably be low in Vitamin B12.
It has been estimated that 92% of vegetarians
are B12 deficient. Take a vitamin everyday that
includes B12 .
  •     Be creative with your food. Try new recipes

including raw food. The Sky is the limit when it
comes to Raw Live Food. Have fun and don’t
use time as an EXCUSE! This way of eating is
not only healthier it is quicker, easier and FUN!
