Mint Falafel



Nutrients in Chick Peas.
You can make many things with chick peas such as Hummus, dips, salads, stews. Today I am sharing this tasty Felafel's recipe.

Chick peas are high in protein, fiber, folic acid, manganese, and include minerals such as iron, magnesium, copper, and zinc.

Chick peas can help lower cholesterol, prevent diabetes, prevent coronary disease it is  low GI and is a versatile food low in fat high in protein. 

Mint falafel 


Ingredients

2 Tbsn Chia seeds
1 cup chick peas, can or pre soaked
½ cup  quinoa, cooked
1 cup of spinach leaves
1 cup mint, packed
½ cup Basil, packed
½ cup coriander
1 tspn cumin
1 tspm garlic powder
1 lemon
1 Tbspn olive oil
1 tspn sea salt
¼ cup quinoa flakes or oat flour to roll
1 tspn coconut oil

Method

Mix chia seeds and lemon together in a glass, allow to sit and form a gel consistency. Process chick peas, quinoa,  spinach, mint, basil, coriander, cumin, garlic, olive oil, salt.
Sprinkle quinoa flakes on a chopping board, roll into falafel's, transfer to a pan with coconut oil and cook 3- 4 mins on each side or unitl golden brown. You may have to mould them into a nice round shape or use a egg shaper.

Serve with my Basil couscous salad and  Greek yogurt 

Basil  Cous Cous  serves 3-4

Quick , easy and tasty

Ingredients

1 cup couscous Organic whole wheat
1 tbspn chia
1 cup boiling water
pinch sea salt
1 tbspn olive oil
½ cup sun dried tomato
1 spring onion, finely chopped


1 Tbspn olive oil
1 garlic clove, sauteed
2 cup fresh tomato, finely chopped
1 cup of basil

Dressing
2 tbspn balsamic
1 lemon
2 Tbson olive oil
1 tbspn chia seeds

Method

Add 1 cup of boiling water, 1 cup couscous, chia  to a large bowl,  add pinch salt, 1 tbsp olive oil, stir and cover and sit  10 minutes.
saute garlic in coconut oil.

Add spring onion, sun dried tomato, basil, tomato, garlic,
Make dressing in a glass jar and shake well Stir in all ingredients including the dressing. Add salt and pepper to taste.

Serve with ice-burg lettuce, cherry tomato, and Greek yogurt.
