Quinoa and Kale Crisp Bread





Raw Food Benefits



I believe that taking care of yourself is the best insurance that you can have for a vibrant life full of joy and happiness, and that eating a good diet, rich in vitamins and minerals, will help to promote good health.
For me, a Raw food lifestyle begins with reassessing the basic foods provided for us by nature. In order to do that, I believe that it is essential to strip out of our diets all foods that are processed or packaged, loaded with artificial flavour enhancers and sweeteners and which are devoid of nutritional value.


Nature provides us with a whole array of healthy foods, which, when incorporated into our diet, provides us with vitality, good health and energy. These foods can offer a perfect nutritional package. When eaten Raw, we benefit from the maximum nutritional value that each of these foods offers.


I believe that ‘living’ foods – meaning those that grow in the ground – are our life force. By integrating living foods into our diets, we can look forward to wellness, greater energy, mental clarity, a positive outlook on life and spiritual awakening.

When you eat Raw food, you’ll notice that you don’t need to eat so much, or need to eat the heavier foods that you previously desired. Lighter food makes us feel lighter and more energized. You’ll never feel as if you are on a diet when eating this way.

Quinoa and Kale Crisp Bread

This recipe offers more protein with a nutty taste and grainy texture. A great bread to use as an open sandwich filled with fresh salad and herbs.

Serves 6–8
1 cup kale 1⁄2 cup fresh basil
1 teaspoon cumin
1 teaspoon olive oil

1⁄2 teaspoon Himalayan pink salt or Celtic sea salt
1 teaspoon oregano
1⁄2 cup sunflower seeds
2 cups  LSA meal (mixed ground linseeds, sunflower seeds and almonds) 

1/3 cup warm water
1 cup  cooked quinoa (I use the dark seed) 

Sliced avocado, mixed salad, hummus or jam, to serve


Process the kale, basil, cumin, oil, salt and oregano in the bowl of a food processor then tip into a large bowl.

Process the sunflower seeds just until they form fine crumbs, then add to the bowl with the kale mixture. Stir through the LSA and then add the water a little at a time, and mix between each addition until a dough forms. Stir in the quinoa.

Turn out onto a baking sheet lined with baking paper and press the mixture out to the edges. 

Place a sheet of baking paper on top, then roll over with a rolling pin until flat and 1⁄4 in (0.5 cm) thick. Remove the top paper and transfer to the tray of a dehydrator or bake in the oven  on a low temp 75 degree

Dehydrate for 2–3 hours, or bake in the oven at 100°C/210°F for 30 minutes. 

Be careful not overbake. If you don’t have a dehydrator, bake for 10–15 minutes and then turn off the oven and leave for 30 minutes with the oven door shut. Cut with a pizza cutter into squares

Top with avocado, salad, hummus or a jam. 



Quinoa

Pronounced ‘keen-wah’, this superfood is gluten free, nutritious and high in protein. It adds body
and texture to any Raw food recipe, and has a lovely nutty flavour. Quinoa grains are the grain-like sprouts of a plant similar to Swiss chard and spinach. Rinse the quinoa seeds thoroughly before using them. 





My purpose in writing my  book  and sharing recipes is to help you transform to a lifestyle that provides you with a healthy life, a pain-free body, contentment and longevity. On my Raw food journey, I have learned new ways of creating healthy food that serves my body well and keeps me healthy. Life comes with choices, and you can choose Raw food healthy eating to become part of your life.

Be mindful of the foods that you put into your body. Make peace with your body and nurture it with the food it needs. Treat your body like a TEMPLE, respect it daily with nourishing foods, exercise and rest and relaxation/meditation.
